The Duck Legs have been chosen specifically for this recipe based on their quality and their tender and density meat.
We would recommend to drain the juice before cooking them so that they are less greasy for when you grill them.
You can also use the grease and fat in the tin and use it in the cooking preparations which will give you an authentic taste to your meals. For example, cooking your chips in the Duck fat will taste divine! We would recommend keeping the grease in the refrigerator in between uses.
