Emmental is renowned for its delicate, slightly fruity and buttery flavour. Unlike other stronger cheeses, it appeals with its mildness, making it universally popular. The longer it is matured, the more pronounced its aromas become, with notes of hazelnut and sometimes dry hay.
Traditionally, Emmental is made from raw milk from cows fed on grass and hay. The milk must be of impeccable quality to ensure the success of the large wheels.
