AOC Ventoux
TERROIR
Julien Cornud the winegrower is also a botanist and loves his terroir. His vineyards are located in Caromb, a small village at the foothill of Mont Ventoux. His vineyard has the particularity to contain pieces of flint and for that reason Julien Cornud used to joke he could make a very nice Sauvignon Blanc like in the Loire region.
Clay and limestone with pieces of flint like in Sancerre.
WINEMAKING
The grapes are crushed and destemmed. Then we have a 10 to 15 days maceration to extract slowly and softly the aromas, tannins and colour. Traditional vinification followed by maturing in concrete before bottling.
AGEING
6 month in concrete tank
GRAPE VARIETIES
Grenache 60%, Syrah 35%, Carignan 5 %
TASTING NOTES
Dark ruby red colour wine with purple glints. It develops red fruits aromas and spicy overtones such as black pepper. In the mouth, this wine is smooth and its supple structure emphasizes aromas. This well balanced wine offers very round tannins and fresh berries aromas, with some floral and spicy flavors.
TASTING ADVICES
It can be kep 4 to 5 years.
FOOD PAIRINGS
This can be enjoyed with grilled meat, or any Mediterranean dishes, stew and cheese.
