AOP Saint-Émilion Grand Cru
ORIGIN-TERROIR
In 1985 Frangois Ducousso purchased 1.5 hectares of vine parcels in the Saint-Émilion Grand Cru appellation. They are situated in the commune of Saint-Etienne de Lisse, 7 km South-East of the mediaeval town of Saint-Emilion. The vines have an average age of 45 years and are planted in predominantly clay soils. It is in the heart of this outstanding terroir that Chateau Puy Barbey is produced.
VINIFICATION
Cultivation: sustainable methods, dis-budding, leaf stripping and green harvests. Mechanical harvests, de-stemming, sorted using density measurement baths (10% of the fruit is discarded). Pre-fermentation at cold temperatures in stainless steel vats. Temperature controlled vinification followed by maceration at high temperatures in order to extract using micro-oxygenation. Drawing off and pressing using a low pressure press in order to extract only the juices. Malolactic fermentation before being transferred to barrels. Aged for 12 months in French oak barrels including 14 new oak.

95% Merlot, 5% Cabernet Franc
TASTING NOTES
Attractive garnet colour. Delicate nose of reel fruits, morello cherry and black cherry. Rich, round palate with elegant notes of oak and roasted aromas (such as mocha). Silky smooth tannins, excellent balance and a mineral finish.
FOOD & WINE PAIRING
This wine makes the perfect partner for a rib of beef, lamb shank, deer with redcurrant sauce or strong-flavoured cheeses such as Livarot.
