Terroir
Property of 300 ha including 80 in Cru Classé, extended in the golden triangle of the Côtes de Provence, on a vast plain endowed with a clay-limestone, spicy and mineral soil. A favorite terroir for rolle.
Vinification
Plot selection.
Night harvest at the end of August to preserve all the aromatic freshness.
Cooling of the harvest to 15° C by passing through a tubular exchanger before cold skin maceration.
This is followed by pressing and selection of juices, static settling at 13° C, and long fermentation in stainless steel vats and in concrete tanks at controlled temperature between 15 and 18° C. Aging on fine lees with stirring at the end of fermentation to bring roundness to the wine. Racking, filtration by tangential filter, assembly at the end of the year, stabilization by bonding with bentonite.
Transfer and storage under nitrogen to preserve the aromas and preserve the wines from oxidation. This cuvée is bottled in one go.
History
This cuvée was created in homage to the Duke of Sully, Prime Minister of King Henri IV, who planted the first mulberry tree in France at the Château in 1594 as well as magnificent plane trees that adorn the gardens.
Tasting
Yellow, pale gold color. The nose is generous and elegant. It gives off subtle aromas of white peaches and pink pomelo.
The attack on the palate is round and suave. A very nice length, all in freshness.
This gastronomic blanc de blancs is to be tasted between 12° and 13° C.
Accords
Blanc de Blancs for gastronomy to drink from aperitif to dessert. With its delicate aromas, it will successfully accompany meals with grilled fresh fish, goat cheese and will be greatly appreciated as an aperitif.
