Chabichou du Poitou AOP

with Raw Milk

Its rind, ivory in color, is thin and formed of small folds. It is covered with a light white down and may also have other yellow or blue surface mold.

Its paste is white and firm, with a homogeneous texture, while remaining supple. The younger the cheese, the more melting it is. The more mature it is, the more brittle its dough is and can sometimes become runny under the crust. Chabichou du Poitou can be enjoyed from the mildest to the most assertive.

As with all cheeses, it is important to consume it at room temperature in order to appreciate all its nuances of flavor.
