Vinification
To enable a maximum conservation of the aromas and the quality of each grape variety the harvesting takes place in the evening and is followed by a low temperature maceration allowing a maximum extraction of the fragrances and aromas. After, a very gentle pneumatic pressing and low temperature fermentation is undertaken to guarantee the exceptional quality of this upscale wine. This “cuvée” is bottled once a year.
History
This wine was created as a tribute to Seigneur de Piegros, who was known during the 17th century as an honourable wine gentleman. In his will and testament he stipulated that the domain, ancient fiefdom of Piegros, should always be managed according to the Provencal and family tradition
