Manual harvesting.
Destemming before placing in vats to be vinified in a traditional way between 25° and 30° C for 20 to 30 days.
Daily reassembly. Malolactic fermentation in vats. Aging 100% in barrels for 12 to 18 months.
History
The Louis Fabre cuvée, presented in an Exception Bordeaux bottle, is housed in a wooden case (6 bottles lying down).
This cuvée is reserved for the gastronomic elite and great exceptional amateurs.
Tasting
Garnet red color.
On the nose, it seduces with the intensity of its aromas and expresses itself on notes of red fruits and spices.
On the palate, harmony reigns supreme with superb tannic expression.
Volume and peppery touches accompany a length in the mouth with character.
Accords
With this remarkable vintage, we will choose a fine gastronomy of simmered meats (game, beef bourguignon, terrines …) and cheeses with character.
A passage in a carafe of a few hours is recommended.
